Berry Jam Sandwich
Home made compote/jam in a sandwich.

1 - 1 1/2 cup mixed berries
1 - 1 1/2 tbsp honey/maple syrup/agave syrup/sweetener of choice
1/4 cup water
1/4 lemon juice, or less
1 - 1 1/2 tbsp chia seeds
3 - 4 drops vanilla extract (optional)
1 tbsp peanut butter or nut butter or choice (or protein nut butter, optional)
1/2 - 1 banana, sliced (optional, but recommended)
4 - 6 slices bread of choice (multigrain, rye, chia)
1Half mash some of your berries.
2Add all liquid ingredients along with berries into a pot and simmer.
3Let the water reduce a little and the mixture thicken slightly.
4Remove from heat, and add in chia seeds and mix well.
5Refrigerate till needed.
6Spread over bread, along with peanut butter if you want, or enjoy with pancakes and muffins!
Lasts good refrigerated up to 1 week.
