Berry Blast Chia Seed Pudding
Delicious and healthy chia seed pudding packed with protein, Omega-3, antioxidants and calcium that you can make in under 10minutes. Chia seeds add protein, fibre, healthy omega-3 fats and important minerals.

1 can 400ml full-fat coconut milk
350 ml unsweetened almond milk
120 g chia seeds
2 teaspoons pure vanilla extract
2 teaspoons ground cinnamon
4 drops of stevia (only if you need some added sweetness)
250 g fresh berries
25 g finely chopped walnuts, for garnish
1Place all the ingredients, except the chia seeds, walnuts and berries, in a blender and blend until everything is incorporated.
2Put the chia seeds into a large glass bowl, add the liquid from the blender and stir until everything is incorporated.
3Cover and refrigerate overnight to set.
4To serve, mix and divide into four portions, top each bowl with equal amounts of the berries and chopped walnuts.
