Beet Hummus Stuffed Roasted Portobellos

Preheat oven to 400 degrees. Blend all of the ingredients for the beet hummus in a high speed blender or food processor until smooth and creamy. Set aside. Beet Hummus

1 cup cooked beet, steamed, boiled or roasted, diced

1 15 oz can chickpeas, drained but reserve 1/3 cup of liquid brine

1/3 cup aquafaba (the liquid inside of the can of chickpeas)

1/3 cup tahini

1/4 cup lemon juice

1/3 teaspoon salt

1/2 teaspoon ground cumin

1 tsp chili powder

pinch of pepper

2 roasted garlic cloves (optional)

Mushrooms

1/2 tbsp balsamic vinegar

1 1/2 tbsp low-sodium tamari

2 tbsps lime juice

2 portobello mushrooms, wiped clean and stems removed

Toppings

sliced avocado

chopped green onions

sesame seeds

Preparation

1Preheat oven to 400 degrees.

2Blend all of the ingredients for the beet hummus in a high speed blender or food processor until smooth and creamy. Set aside.

3Make the marinade for the mushrooms by combining the balsamic vinegar, tamari, and lime juice in a small bowl. Coat each mushroom in this mixture and then place the mushrooms gills side up on a lined baking sheet. Drizzle the remaining marinade inside of each mushroom cap.

4Roast the mushrooms for 10 minutes, then remove them from the oven and stuff with beet hummus. Return the mushrooms back to the oven and roast them for another 10 minutes.

5Remove from oven and allow to cool for at least 10 minutes. Garnish with chopped green onion, avocado, and sesame seeds.
