Basil-infused Orzo Pasta

Orzo is a form of short-cut pasta, shaped like a large grain of rice and is a great alternative to larger, heavier forms of pasta for your dinner side dish. This basil-infused essential oil balances the bitterness of the oil and radicchio with the sweetness of shallots and sun-dried tomato. The main pictured is a simple pan-seared salmon basted with thyme essential oil butter. Simply delicious!

Main Ingredients

1 cup orzo pasta

1 cup thinly chopped radicchio

1/2 sliced shallot

3 cloves of garlic diced

50 grams sun-dried tomatoes in oil

1 drop basil essential oil

handful of spinach

salt to taste

pepper to taste

Preparation

1Boil pasta until al dente, toss in olive oil, set aside.

2Heat olive oil in saute pan, caramelize garlic, shallot, sun-dried tomatoes. Add 1 drop of basil oil.

3Add orzo pasta and radicchio to saute pan and saute for 5 minutes. Then add salt and pepper to taste.

4Add finely chopped spinach, toss all ingredients together. Serve.
