Ingredients

1 bunch of cilantro

1 yellow or white large onion

1 green bell pepper

1/2 yellow bell pepper and 1/2 red bell pepper

2 - 3 cloves of elephant garlic* (or 6 regular cloves of garlic)

1 tablespoon of white or red wine vinegar

1 olive oil

food processor or blender

Preparation

1Wash cilantro

2Cut the stems of the cilantro bunch (Store in freezer for soup or stock)

3In a food processor (or blender) add cilantro, pulse a few times

4Roughly chop onion and add to blender

5Roughly chop green, red, and yellow pepper and add to blender

6Add chopped garlic clove

7Pulse a few times (don't completely blend yet)

8Add Vinegar and oil

9Blend until smooth

Additional Notes

-I like making two batches, and store the second one in the freezer. -I don't add salt so that I can control the salt as I cook. -You can also make a different version using 1/3 cup of tomato paste.
