Banana Zucchini (paleo & Grain-free) Waffles
Combine all ingredients into a batter. Heat a waffle pan to about 400 & spray with coconut oil or other baking oil. Cook each waffle for about 3 minutes (you can do mini 1/4 cup sized waffles or giant 1 cup sized - in which case it makes about 2).

1/2 zucchini shredded water removed
2 tbsp ground flaxseed
1/2 cup cassava flour (this is a grain-free flour made from the root vegetable cassava-i buy otto's brand)
1 tsp baking powder
1 tsp cinnamon
1 ripe banana mashed
1 tsp vanilla extract (optional)
1 tbsp almond milk

Note these can also be made into pancakes with some extra almond milk.
