Main Ingredients

1/2 cup margarine

2/3 cup sugar

2 eggs 1 cup mashed banana

1 cup shredded zucchini

1 3/4 cup flour

2 tsp baking powder

1/4 tsp baking soda

2/3 cup chocolate chips


1Cream margarine and sugar until light and fluffy.

2Add eggs, banana, and zucchini. Mix well.

3Combine dry ingredients and slowly add to the wet mixture.

4Fold in the chocolate chips.

5Set your oven to 350 degrees Fahrenheit and let your mixture sit while the oven comes up to temperature.

6Once the oven is pre-heated, scoop muffins into muffin tins (makes 21 muffins) or pour batter into a greased loaf pan.

7For the cupcakes bake for 30 minutes and for the loaf bake for 50-55 minutes or until golden brown and a toothpick comes out clean.

Additional Notes

Don't preheat the oven, the batter needs to sit for a little bit before baking.
