Main Ingredients

6 tbsp coconut flour

4 eggs, beaten

1 1/2 small bananas, mashed

1/4 tsp sea salt

1/4 tsp baking soda

1/2 cup full fat canned coconut milk

2 tbsp coconut oil, melted

1 tsp vanilla extract

pinch of cloves

Preparation

1In small bowl, mash bananas. Set aside.

2Mix wet ingredients together in a large bowl (eggs, coconut milk, vanilla, melted coconut oil, and mashed bananas). Whisk to combine.

3Add in dry ingredients (coconut flour, salt, cloves, baking soda) to wet batter. Whisk to combine.

4Allow batter to sit for at least 10 minutes. Preheat waffle iron and grease iron with coconut oil.

5After 10 minutes, scoop batter into waffle iron and bake per your waffle maker's instructions. (I used 1/3 cup of batter per waffle in my 2 square waffle maker).

6Once waffles are done, cool waffles on a wire rack, greasing your iron between waffles if necessary.

7Serve with sliced bananas, jam/nut butter if you'd like.
