Banana Bread Blondies

Preheat oven to 350. In a large mixing bowl or stand mixer, mash bananas and add the rest of the wet ingredients. Then fold in dry ingredients except chocolate chips/mix ins. Once batter is formed, fold those in last. Line an 8x8 baking pan with parchment paper or spray it with coconut oil (I think parchment works better if you don't want it to stick) and scrape batter into the pan. Bake for 24 mi. . .

Main Ingredients

3 ripe bananas

3 pasture-raised eggs

1/3 cup nut butter, i like cashew butter for this for its neutral taste but you could use any nut butter

1 tbsp of coconut oil, melted

1 tsp vanilla extract

1 cup almond flour

1/2 cup coconut flour

1 tsp cinnamon

1 tsp baking powder

sprinkle of sea salt

optional: collagen, i usually add about six tbsp

3/4 cup of dark chocolate chips or another mix-in of choice (lately i have been using pascha dairy-free, soy-free organic 85% dark chocolate chips that i get on thrive market)

Preparation

1Preheat oven to 350.

2In a large mixing bowl or stand mixer, mash bananas and add the rest of the wet ingredients. Then fold in dry ingredients except chocolate chips/mix ins. Once batter is formed, fold those in last.

3Line an 8x8 baking pan with parchment paper or spray it with coconut oil (I think parchment works better if you don't want it to stick) and scrape batter into the pan.

4Bake for 24 minutes at 350, until a toothpick comes out clean.

5Once cooled, cut into even squares and enjoy! Store in the refrigerator.
