2 cups cauliflower rice

1/2 cup organic carrots (chopped)

1/2 cup edamame

2 cloves garlic (chopped)

1 can no salt added chickpeas

1 container organic cherry tomatoes (halved)

1/2 red onion

handful of parsley (chopped)

1 juice of lemon

1/4 cup balsamic vinegar

1/4 cup olive oil

salt & pepper
