Baked Ziti With Sausage, Gluten Free Dairy Free
A delicious and hearty recipe filled with veggies but without gluten and dairy allergens.

1 package of tolerant organic pasta
2 tablespoons olive oil
1 lb of mild italian pork/chick sausage from the butcher section.
1 large onion chopped
3 - 4 garlic cloves minced
2 tbsp italian seasoning or combo of these: oregano, basil, parsley
32 oz canned italian tomatoes (bpa free cans). i blend mine
1 cup shredded carrots (don’t peel)
1 cup shredded zucchini’s (don’t peel)
16 oz miyokos mozzarella
1 cup nut milk
1 cup grated violife parmesan
1Slightly undercook pasta. 6 min. Drain. Toss with a bit of olive oil
2Heat oven to 350 degrees
3Cook sausage until no longer pink in the middle
4While this is cooking, in a separate bowl, mix “mozzarella”, milk, and half “Parmesan”
5Once the meat is browned, add onion and cook until the onion is translucent 4-5min
6Add garlic and seasoning and cook 1 more minute
8Add tomatoes or pasta sauce to meat mixture and cook until bubbly 4-5min
9Mix cheese with pasta sauce and meat mixture
10I don’t spray my large baking dish
11Mix pasta in they sauce or layer pasta, then layer sauce. Whichever is easier.
12Place ziti mixture in dish
13Sprinkle with remaining cheese
14Bake uncovered for 20 min at 350 degrees
Serve with a salad.
