Baked Pineapple Salmon

Main Ingredients

8 fresh pineapple rings, fresh or canned

1 fresh salmon fillet (approx 3 lbs. ) skin removed

season with kosher salt

season with freshly ground black pepper

3 tbsp. melted butter

3 tbsp. habanero

2 tbsp. freshly chopped cilantro

3 garlic cloves, minced

2 drops ginger vitality essential oil

4 drop lime vitality essential oil

2 tsp. toasted sesame oil

1/2 tsp. crushed red pepper flakes

purple onion for garnish-optional

thinly sliced green onions, for garnish

lime wedges, for serving


1Preheat oven to 350°

2Layout pineapple slices on foil lined baking sheet

3Season both sides of the salmon with salt and pepper and place on top of pineapple slices.

4Blend butter, habanero jelly, cilantro, garlic, sesame oil, and red pepper flakes.

5Brush all over salmon fillet. Optional – add purple onion slices

6Bake until the salmon is cooked through, about 20-25 minutes.

7When fish is flakey turn oven to broil for 2 minutes to make salmon golden

8Garnish with green onions and lime wedges.
