Baked Mango Po'e
This delicious Tahitian fruit pudding is easy to make and bake in the oven for a nice sweet treat!

4 ripe mangoes, peeled and cut into chunks
1/2 cup brown sugar
3/4 cup cornstarch
2 teaspoons vanilla
coconut cream to top
1Preheat oven to 375 degrees F
2Puree mangoes in food processor.
3Mix together brown sugar, cornstarch, and vanilla
4Add to puree and blend another minute (make sure there are no lumps of cornstarch.)
5Spray an 8x8 baking dish and pour puree inside.
6Bake for 40 minutes or until pudding is firm and bubbling.
You can either serve the po'e warm with coconut cream, or cool before cutting and serving. If storing in the refrigerator cover with plastic wrap.
