Baked Eggs In Avocado With Proscuitto

Creamy eggs, buttery avocado, and salty, crisped prosciutto coming together in one harmonious celebration that is the first meal of the day (though these make for a great on-the-go lunch, too).

Main Ingredients

2 ripe avocados

4 eggs

2 slices of proscuitto

salt and pepper to taste


1Preheat oven to 425.

2Cut the avocados in half. Depending on the size of the avocados and eggs, you may need to scoop a few teaspoons of the flesh out to have plenty of room for your eggs. Arrange avocados in baking dish so they are stable and won't tip over (you can use a small dish or rest the avocado against the side of the dish).

3In a small bowl, crack one egg, being careful not to crack the yolk. Gently slide the egg into the avocado half. Repeat with other three eggs. Sprinkle with cracked pepper and salt to your desire.

4Chop proscuitto into small pieces, sprinkling on top of each egg.

5Place avocados into oven, cooking for 20-30 minutes, until white are set and yolks are firm.

Additional Notes

If watching your sodium, you could substitute the proscuitto with deli ham or omit it all together.
