Baked Chicken With Pumpkin Sauce

A savory, tasty way to eat pumpkin with chicken. This dish tastes even better the second day.

Main Ingredients

4 large chicken breasts cut in half

1/2 medium onion chopped into fine pieces

1 c. pumpkin puree

1/2 c. milk

1/2 pint sour cream

2 tsp. salt

2 tsp. dried cilantro

1 tsp. turmeric

1/2 tsp. paprika

1/2 tsp. pepper


1Saute the onion in a Tablespoon of oil until transparent.

2Add the pumpkin and the milk to the onion and stir together. Simmer.

3Add the spices and mix well.

4Add the 1/2 pint of sour cream and blend well and heat through. If it seems too thick, add a little more milk.

5Line a large baking dish with foil and spray with cooking spray.

6Arrange the chicken in the baking dish.

7Spread the sauce over the chicken until it is well covered.

8Bake in a 350 degree oven for 1 hour.

9Can be served over rice and with a vegetable.

Additional Notes

I didn't serve this over rice, but I wish that I had because there is a lot of delicious sauce.
