Main Ingredients

1 can of tuna (120g can)

1 - 1 1/2 cups water

1/2 - 3/4 cup uncooked quinoa

1/4 - 1/2 cucumber

1/2 yellow pepper

2 - 3 green onions

1/2 of an avocado

1 tbsp sesame seeds

Creamy Avocado Dressing

1/2 of an avocado

1 tsp lime juice

1 tsp apple cider vinegar

1 - 2 basil leaves

1/2 tsp oil olive (optional)

Preparation

1In a medium sauce pan bring the water and the uncooked quinoa to a boil (for every 1/2 cup uncooked quinoa use 1 cup water). Reduce heat to low, cover and simmer for about 15-20 minutes until the water has been absorbed.

2Once the quinoa is cooked remove from heat and let cool (Skip step 1 and 2 if you have 1-1 1/2 cups of pre-cooked quinoa)

3While the quinoa is cooking, strain the excess water from the canned tuna and place tuna in a big bowl

4Separate the tuna into large chunks with a fork

5Dice the green onions

6Cut the yellow pepper and half of an avocado into thick pieces

7Slice the cucumber and cut each slice in half or quarters

8While the quinoa is cooling, prepare the creamy avocado dressing by blending together the other half of the avocado with the lime juice, apple cider vinegar, basil and oil olive (oil is optional).

9Once the quinoa has cooled, mix the cooked quinoa, diced onions, yellow peppers, avocado chunks, cucumbers, sesame seeds and the creamy avocado dressing into the bowl with the tuna

10Plate it and enjoy.... or just eat it out of the bowl and enjoy- it's that good!
