Main Ingredients

6 oz. chopped dark chocolate (at least 70%, 100% for whole 30 and keto)

2 tablespoons canned, fullfat coconut milk

2 medium avocados

pinch of salt

pinch of cinnamon (optional)

optional items to roll truffles in like unsweetened coconut, cacao powder, chopped nuts, crushed freeze-dried berries

1Make your ganache by melting dark chocolate chunks and coconut milk in a microwave safe bowl for 30 seconds in the microwave. Stir, and reheat in 30 second intervals until chocolate is melted but not burned (DO NOT heat for longer than 30 seconds at a time).

2Pour chocolate ganache into your food processor. Add flesh of avocados and pinches of salt and cinnamon.

3Pulse until combined and a creamy mixture remains. Refrigerate for about 1 hour or until mixture is firm enough to scoop out.

4Scoop out with a tablespoon or cookie dough scooper, roll in whatever toppings make ya happy, and arrange on a parchment lined baking dish. Refrigerate until ready to serve.

5Store in an airtight container for 2 weeks.
