Crispy whole wheat toast topped with mashed avocado, toasted pepita seeds and a hemp seed dressing. Vegan, Gluten free possible, and soy free

4 pieces of whole wheat bread (or gluten free bread of choice)
1 Large organic avocado, ripe
1/2 cup pepita seeds
1/4 cup hemp seeds (they can be found in most health food stores or in bulk bins)
1/4 cup water
1/2 tsp garlic powder
1/4 tsp salt
sprinkle of black pepper
1Prepare hemp seed sauce by placing hemp seeds, water, garlic powder, salt, and pepper in a small blender or food processor. Process for 2-3 minutes until smooth. It should be slightly thicker than milk.
2Preheat oven to 300F. Place pepita seeds on a baking tray and bake for 6-8 minutes, or until seeds are slightly browned.
3Toast slices of whole wheat bread.
4Slice avocado in half. Using a spoon, scoop out the insides, discarding the large seed. In a small bowl with a fork, mash the avocado.
5Spread avocado on toasted bread, sprinkle with toasted pepitas seeds, and drizzle hemp seed sauce over the top. Enjoy!
