Avocado Mug Cake

5 . tbsp almond flour
5 . tbsp vanilla protein powder
1/2 tsp truvia/stevia
3/4 tsp baking powder
1/4 tbsp mashed avocado (a little more than of a medium avocado)
1/4 cup almond milk
1/2 tsp vanilla extract
1In a mixing bowl, combine all ingredients until batter is smooth. Pour all ingredients into an oversized mug sprayed with coconut oil. Cook in microwave for approximately 2.5 minutes, until top of cake is no longer wet and toothpick inserted comes out clean.
Note the recipe creator would not let me put "2 minutes" for prep or cook time but this takes 5 minutes TOTAL! I recommend topping it with yogurt, peanut butter, granola, banana, berries or all of the above! I'm telling you this is delicious!
