Avocado Blender Brownies With Fudgy Avocado Frosting {paleo, Gluten-free, Dairy-free}

Main Ingredients

3 bars (300 grams) dark chocolate*

2 tablespoons coconut oil

2 avocados

1/2 cup honey, maple syrup, or agave

1 teaspoon vanilla

3 eggs 1/2 cup minus 1 tablespoon coconut flour

1/2 cup organic cacao powder

1/4 cup dark chocolate or semi-sweet chocolate chips

fudgy avocado frosting (recipe in notes)

Preparation

1Preheat the oven to 400.

2Brush a 9X13 (for thinner brownies) or 11 X 7 (for thicker brownies) with melted coconut oil or line with nonstick parchment paper.

3Melt 3 bars of dark chocolate and coconut oil in the microwave for 30 seconds. Stir, and reheat for 30 more seconds. Repeat this until chocolate is melted and smooth. Do not heat for more than 30 seconds or the chocolate will burn. Allow to cool for 5 minutes.

4Place avocados, honey, vanilla, and cooled chocolate into a blender or food processor. Blend until well combined, scraping down the sides as needed. Add one egg at a time into the blender, waiting until each egg has been completely incorporated before adding the next. Pour in dry ingredients and blend until a thick batter forms.

5Using a spoonula, scrape the batter into the prepared pan and bake for 15-20 minutes or until a knife comes out of the center clean.

6Immediately press chocolate chips into the top of the brownies. Allow to cool.

7Spread on the frosting, slice, and devour.

8Store covered for 3 days, refrigerated for 1 week, or frozen for 3 months.

Additional Notes

*If you're a hardcore dark chocolate fan, feel free to use 80-100% cacao. If you're new to the dark chocolate world, you may want to stick with 60-70% cacao. **Fudgy Avocado Frosting: Mix 1 avocado, 3 tablespoons cacao powder, 2-3 tablespoons honey, 1/4 teaspoon almond extract, and a dash of salt in a food processor or by hand.
