Main Ingredients

6 large eggs

3 slices of cooked bacon, crumbled

1 avocado

2 tablespoon sour cream

1 teaspoon cilantro

1/2 teaspoon cumin

1/2 teaspoon garlic salt

1/2 teaspoon garlic powder

1/2 juice from lime

1In large pot, bring water to a boil . Using a large spoon, carefully lower eggs into boiling water. Return water to a boil and boil eggs for 10 minutes. Drain eggs and immediately place into ice water. Peel when completely cooled.

2While eggs are cooking, fry bacon until crispy. Crumble and set aside.

3Slice eggs in half and put yolks into a medium mixing bowl. Arrange the egg whites cut side up on a serving plate.

4Add avocado, sour cream, spices and lime juice to cooked egg yolks. Blend with hand mixer until smooth.

5Spoon equal amounts into egg whites. I use a cake decorator for that special touch.

6Sprinkle crumbled bacon on top of eggs.

7Serve immediately or refrigerate until ready to serve.

Additional Notes

Can top eggs with chopped tomatoes, black olives or jalapenos.
