Avocado And Tomato Summer Salad

This Avocado and Tomato Salad makes the perfect side salad for your summer cookout – just in time for the Fourth of July. Not only is this recipe extremely easy to make but it is also Paleo and Whole 30 approved.

Main Ingredients

4 avocados (diced)

4 tablespoons of lime juice (2 limes)

1 cup grape tomatoes (halved)

1/2 medium red onion (diced)

salt and pepper to taste

1 bunch cilantro (chopped for garnish)


1Cut each avocado lengthwise and remove the pit. Score the avocado flesh to make cubes and then scoop the flesh out of the avocado skin with a spoon. Use an avocado slicer for easy removal of pits

2Rinse your grape tomatoes and cut into halves.

3Dice your red onion.

4Chop your cilantro and set aside.

5Place diced avocado, chopped tomatoes, diced red onion into a large salad bowl.

6Add 4 tablespoons of lime juice, and salt and pepper to taste.

7Lightly toss your mixture to combine.

8Garnish your mixture with chopped cilantro.
