This is a tasty sandwich that satisfies the "nut free" requirement at the elementary school lunch table! It also boasts leafy greens without upsetting any finicky eaters!

1 ripe avocad0
1/2 cup raw baby spinach
1/4 ripe banana (optional)
1 tomato (optional)
1Chop spinach leaves.
2Remove avocado from its skin. Mash with a fork.
3Add chopped spinach to avocado. Mix well. Taste! Add in optional banana for added sweetness and mix evenly.
4Spread on sandwich bread or toast. Top with tomatoes. Enjoy!
If making ahead, I suggest toasting your bread so that it does not get soggy.
