Autumn Overnight Oats
These creamy overnight oats are made with coconut milk and chia seeds for a rich texture. Choose between Pumpkin Spice, Apple Cinnamon, or Banana Walnut mix-ins.

1/2 cup oats
1/2 cup coconut milk (canned)
1/4 cup plain milk (cow, almond, soy, etc. )
1 - 2 tablespoons maple syrup (according to taste)
1 - 1/2 teaspoons chia seeds
1/2 teaspoon vanilla extract
pinch of salt
1/4 cup pumpkin puree
1 teaspoon pumpkin pie spice
whipped cream (optional, for serving)
1/4 cup apple sauce
1 - 1/2 teaspoons cinnamon
1/2 small apple, chopped (add just before serving)
1 ripe banana, mashed
2 tablespoons walnuts, chopped
1 teaspoon cinnamon
1/2 small banana, sliced (add just before serving)
1Stir together all ingredients in a jar or bowl.
2Cover and refrigerate for at least 4 hours, but ideally overnight before eating.
3Top with freshly chopped fruit, whipped cream, or nuts and a sprinkle of cinnamon and serve.
This recipe yields just over one cup of oats for 2 small servings or one large serving. One 13.5 ounce can of coconut milk provides 1.5 cups of milk, enough to triple the recipe.
