Apricot delicate flavors in a filling for hamantaschens, cakes and bars

12 ounces dried apricot
2 cups boiling water, (as needed)
1 cup light brown sugar
1/4 cup fresh lemon juice
10 ounces apricot spread, (good quality)
2 tablespoons fresh lemon zest
1Combine all ingredients in a medium saucepan and bring to a boil, stirring often. Reduce heat and simmer for 15-20 minutes until apricot softened and the mixture thickens. If the mixture becomes too dry, add more orange juice.
2Taste the filling and adjust the seasoning. Cool and then place in the bowl of a food processor and pulse to chop us the apricots. Do not puree!
3Yield: "4 cups"
