These vegan apple pie bars are my greatest creation yet! They're decadent and super satisfying.

Main Ingredients

1/2 cup melted coconut oil

1/4 cup brown sugar

1 teaspoon vanilla extract

1 cup unbleached all-purpose flour + 2 tablespoons

pinch of salt

2 large or 3 small apples, sliced

3 tablespoons of peanut butter

1 teaspoon cinnamon

1/2 cup old-fashioned oats

1/3 cup maple syrup

1/4 teaspoon cinnamon

1/4 cup unbleached all-purpose flour

1/4 cup coconut oil

Preparation

1Pre-heat oven to 350 degrees. Line 8x8 pan with parchment paper and set aside.

2Make the crust: Stir 1/2 cup melted coconut oil, brown sugar, and vanilla extract. Once mixed, add in 1 cup of flour and pinch of salt. Once dough is formed, press into pan and bake for 12-15 minutes.

3Make the filling: Combine peanut butter, 1 teaspoon cinnamon and 2 tablespoons of flour. Mix with sliced apples and set aside.

4Make the topping: Mix oats, maple syrup, 1/4 teaspoon cinnamon, and 1/4 cup flour. With a fork add in room-temperature coconut oil until it creates a crumble texture.

5Layer apple filling on top of warm crust and pack in tightly. Top with streusel and bake for about 30-35 minutes or until golden brown.

6Chill for at least an hour. Cut & enjoy!
