Main Ingredients

2 eggs, room temperature

1 cup almond milk, room temperature

2 tbsp applesauce

4 tbsp grapeseed oil or coconut oil

1 single serve container bob's red mill gluten free oats*

1 cup oat flour*

1/2 tsp baking powder

1/2 tsp ground cinnamon or more to taste

1/4 tsp ground nutmeg

1/8 tsp ground cloves

Preparation

1Take out eggs and 1 cup almond milk about 30-45 minutes before beginning to prepare waffles to allow them to come up to room temperature (or warmer than the fridge temp).

2To prepare, mix all dry ingredients (gluten free oats through cloves) in a large bowl. Stir gently and set aside.

3In a smaller bowl, mix wet ingredients (eggs through oil). Stir gently, breaking up egg yolks.

4Combine wet into dry ingredients and mix thoroughly.

5Allow batter to sit for 10 minutes until thickened. If batter is still slightly runny, add 1 tbsp oat flour, stirring to incorporate. Allow batter to sit 2-4 minutes more.

6Preheat oven while batter is sitting. Spray with non stick cooking spray. When waffle iron is warm, pour 1/3 cup increments (or what your iron calls for) into the iron. Cook per your waffle maker's directions.

7Allow waffles to cool on a wire rack.

8Serve with sliced apples, applesauce, almond butter, or maple syrup and yogurt. Enjoy!!!

Additional Notes

*You can use any flavor of gluten free oats you prefer. I chose Bob's gluten free apples and cinnamon here. If you don't have, then add another 1/2 cup rolled oats (make sure to flavor them accordingly, as your waffles won't have enough spice.)

*You can also use a combination to make the 1 cup (half of oat flour and half chickpea flour) if you have sone on hand.
