2 tbsp honey

1 tsp bicarbonate of soda

2 tbsp boiling water

100 g caster sugar

75 g oats

40 g coconut

100 g plain flour

Preparation

1Preheat your oven to 180, and prep you baking sheets.

2Heat the butter in a small sauce pan and add the Honey while stirring. Mix the Bicarb and boiling water. Add the Bicarb mixture to the Honey mixture.

3Combine the Sugar, Oats, Coconut and Flour in a large bowl. Pour over the Butter mixture and stir.

4Make 1inch size balls and drop them onto your baking sheet. Remember to leave space as the biscuits will spread quite a bit.

5Bake for 8-10min until risen and golden. Be sure not to bake them to long as they might still feel soft, but will harden once cooled.
