Main Ingredients

1 cup of white vinegar

1/2 cup water

3/4 tsp salt

2 large cloves of garlic, thinly sliced

1 tsp mustard powder or whole yellow mustard seeds

1/2 tsp black pepper

1/2 tsp dried dill or 1 tsp fresh dill, chopped

16 oz. small white button mushrooms, washed and any tough stems removed

2 tbsp diced jarred pimentos

Preparation

1In a small deep pot over medium heat, combine the vinegar, water, salt, garlic, mustard, pepper, and dill. Stir and then let it simmer for 5 minutes.

2Add the mushrooms to the liquid and let them cook for about 20 minutes covered, but stirring occasionally. They should be soft and slightly brownish when done.

3Remove from heat, stir in the pimentos, and allow to cool. Then, store them in the brine in an air tight container in the refrigerator for at least 8 hours to overnight to allow mushrooms to fully marinate. Enjoy within 1-2 weeks.
