Annie's English Pancakes
These are more like crepes than traditional American pancakes. My mom was a wonderful cook and I loved watching her flip these pancakes in the air- a feat I haven't yet mastered! This is a version of her recipe, using whole grain pastry flour to keep it both light and healthy.

3/4 cup whole wheat pastry flour
1 cup milk
1 egg avocado oil, for cooking
honey, preferably raw
1Add flour, milk, and egg to a large bowl and mix well with a whisk.
2Heat a little avocado oil in a medium sized pan and pour in about a third of the mixture - enough to cover the entire pan.
3Cook on medium/low heat for about a minute or until bubbles start to form.
4Flip with a spatula and cook the other side.
5Remove from heat and top pancake with honey and lemon juice.
You can use any type of milk, but I like to use organic whole milk. To make it super healthy, make the egg organic and the honey raw. This recipe makes 3 pancakes.
