Annapolis Valley Pudding

Main Ingredients

2/3 cup brown sugar

1/8 tsp nutmeg

1/2 tsp cinnamon

6 medium apples, peeled and sliced (SweeTango are great)

2 tbsp water

1/4 cup melted butter

2 egg whites

1/3 cup flour

pinch salt

Preparation

1Butter a souffle or deep, straight-sided baking dish. Preheat oven to 450.

2Combine sliced apples, brown sugar, nutmeg and cinnamon. Place in baking dish and add 2 tbsp water.

3Beat together the melted butter and egg whites, then fold in flour and salt. Spread over apples.

4Bake at 450 for 10 minutes, then reduce heat to 350 and bake for an additional 50 minutes. Serve slightly cooled with hot lemon sauce.
