Amazing Vegan Muffins - Chocolate Chip Or Blueberry & Gluten Free!

This delicious muffin recipe has been passed down through my family and perfected over the years to be what it is today! I grew up with my mom making these all the time and they were always my favorite. While the original recipe was not vegan, after some trial and error, my mom and I have found the perfect combo of ingredients to make these muffins 10 times healthier and 100% vegan. Enjoy!!

Main Ingredients

2 very ripe mashed brown bananas

3/4 cup coconut sugar

1/2 cup melted coconut oil

1/2 cup almond milk

2 tbsp flax meal

4 tbsp water

1 tsp baking soda

1/2 tsp salt

2 cups flour of choice (make sure you are using a gluten-free flour if you are sensitive to gluten. we use homemade gluten-free oat flour-see recipe steps below)

3/4 cup chocolate chips (i always eyeball this depending on my chocolate needs. ha! )

Preparation

1Preheat oven to 350

2Make sure bananas are mashed, coconut oil is thoroughly melted, flour is blended, and flax egg is made.

3To make flax egg combine flax meal and water together and beat with a fork until mixed and then let sit for a few minutes.

4To make homemade oat flour blend old-fashioned oats until they become flour consistency. We use our nutri-bullet!

5Combine coconut sugar, coconut oil, almond milk and flax egg to a large mixing bowl and mix well.

6Add flour, baking soda, salt, and mashed bananas. Mix well

7Lastly, add either fresh blueberries or your vegan chocolate chips! I always eyeball these depending on how much we want in our batch.

Additional Notes

Bake 20-25 minutes for moist muffins. Cook a bit longer for dense/chewier muffins. Once you make them a couple times you'll find which you like best. We personally prefer ours nice and moist.
