Aloha Energy Bites

I was feeling melancholic about leaving Hawaii and found this sweet but protein packed recipe on After trying them and letting the flavors meld in my mouth, I can truly say that the Aloha Spirit certainly came through. The only small change I made to the original recipe is that I added a little more water to make things stick, which is reflected on the ingredients below.

Main Ingredients

1 cup toasted coconut (divided)

3/4 cup coarsely chopped macadamia nuts

1/2 cup dried pineapple

3 tbsp water

1 serving vanilla protein powder

2 tsp vanilla

2 tbsp honey (or agave)


1Combine 3/4 cup of coconut and macadamia nuts into a medium bowl.

2Combine the dried pineapple and water into a small microwave safe bowl and heat for 20 seconds. Remove and

3allow to cool enough to handle.

4Add the reconstituted pineapple to a food processor and pulse into a paste.

5Add the pineapple paste to the coconut and macadamia nuts along with the protein powder, vanilla and honey.

6Mix to combine. The consistency should be sticky and form a ball.

7Roll 1 inch balls of this mixture and then coat with the remaining 1/4 cup of coconut. Place in the refrigerator to set

8for a few minutes. Store in an air tight container in the refrigerator for up to a week. Makes approximately 12-15 bites.

Additional Notes

The original recipe calls for 2 Tablespoons of water. You might want to use start with that amount first and add a bit more if it is needed. I added a whole Tablespoon more because it takes 2 scoops of my protein powder to make one serving. Others might use less.
