Almond Plum Cake W/ Cashew Cream Frosting

Main Ingredients

base

2 1/2 cups of ground almonds

1 cup of buckwheat flour

1 cup shredded coconut

2 tsp of baking soda

1 tsp of cinnamon

1 tsp nutmeg

4 tbsp

1/2 cup of maple syrup

1/4 cup of coconut oil

1 cup of puréed dried plums

options to add chopped nuts (i added chopped walnuts as i love the texture! )

frosting

1 1/2 cups of cashews soaked in double their volume of water for min 2 hours vanilla extract

2 - 3 tbsp of almond milk

2 - 3 tbsp of maple syrup

Mixture will be extremely sticky and if a little dry add some almond milk. Mix thoroughly with hands. Place in baking pan and cook for about 25-30 minutes until knife comes comes out clean and firm to touch. Let cool. Follow by making the frosting. Drain the soaked cashews and blend along with the remaining ingredients until creamy.
