Main Ingredients

1/2 cup almond meal

1 cup almond flour (can use all almond flour)

2 eggs, beaten

1/4 cup

1/4 cup unsweetened shredded coconut

1 tbsp coconut flour

1 tbsp raw honey

1 tsp vanilla extract

1/2 tsp baking soda

1/2 tsp himalayan sea salt

1/2 tsp cinnamon

1/4 tsp ground cloves

Preparation

1In a small bowl, mix all liquid ingredients (beaten eggs, coconut milk, honey, and vanilla extract). Whisk to combine. Set aside.

2In a large bowl, mix dry ingredients (almond meal, almond flour, shredded coconut, baking soda, sea salt, cinnamon, and cloves). Whisk to combine.

3Add wet ingredients to dry. Whisk to combine. If the batter is too dry, add in coconut milk 1 tsp at a time until it gets to the consistency you like. I ended up using between 1/4 and 1/3 cup of coconut milk.

4Allow batter to rest for about 10 minutes. Preheat waffle iron. Grease iron if necessary. After time is up, then scoop batter into your waffle iron per your maker's instructions (I use 1/3 cup measurement for my maker). Cook waffles per your maker's instructions.

5Remove from iron. Cool on a wire rack. Serve as desired.
