1 cup pitted dates, if dry soak in a little hot water to plump them up

1 cup oats, regular or old-fashioned

salt, dash

1 tbsp honey

*lemon coconut bites

1 cup almonds, toasted and cooled

1 cup oats, regular or old-fashioned

1 zest of lemon

1/3 cup shredded coconut

salt, dash

1 tbsp honey

1 tsp lemon juice

*double chocolate bites

1 cup almonds, toasted and cooled

1 cup pitted dates, if dry soak in a little hot water to plump them up

1 cup oats, regular or old-fashioned

1 tbsp cocoa powder

1/4 cup mini chocolate chips

1 tbsp honey

1/2 tsp vanilla

Preparation

1In a food processor combine all ingredients | leave out coconut for lemon coconut | leave out chocolate chips for the double chocolate

2Pulse on high until combined. You may need to add a little water to mixture to be able to form into balls. * if you're making lemon coconut use lemon juice instead of water

3Remove from food processor and stir in mini chocolate chips or coconut * skip this step for regular almond bites

4Form into balls or press into a 9 x 9 inch pan. Store in the refrigerator or freezer.
