Alicia's Not Too Spicy Salsa
This delicious salsa has a very slight spiciness and a wonderful smoky flavor.

3 medium tomatoes
3/4 medium red onion
2 bell peppers
1/2 cup cilantro
2 tbs olive oil
1 chipotle pepper in adobo sauce
1 - 2 juice of limes (or lemons)
salt and pepper to taste
chili powder to taste (optional)
garlic powder to taste (optional)
1Preheat oven to 425 F
2Cut tomatoes, peppers, and onions into wedges and place on foil lined cookie sheet. Drizzle with a TBS olive oil and lightly salt and pepper them. Bake for 15 min or until slightly charred. (Or broil them if you have a broiler).
3Place in a food processor with the cilantro, remaining olive oil, lime juice, and chipotle pepper. Run on low until all ingredients are finely minced.
4Adjust seasonings to taste.
5Enjoy with chips!
Any color bell peppers may be used, I prefer a combination of red and orange, but have also made it with just green and it's still delicious.
