2 Bananas (very ripe)
1/4 cup olive oil
2/3 cup coconut flour
1 cup coconut flakes
2 tbsp. cinnamon
1 tbsp. vanilla
2 tsp baking soda
1/2 lemon (squeezed into juice)
1/2 tsp sea salt
1Blend the bananas, apples, dates, and olive oil together in a blender or food processor.
2In a large bowl mix the remaining ingredients. Pour in the blended banana mix into the bowl. Mix well using a whisk.
3Roll dough into balls, flatten, and place on a cookie sheet. Bake at 350° F for 20 min.
4Allow the cookies to completely cool on the pan before lifting. Store in container in the fridge. (They also freeze really well).
