7 Seas Blueberry Buttermilk Pancakes

2 cups of flour
2 teaspoons of baking powder
2 teaspoons of baking soda
pinch of salt
1/2 cup of sugar
2 cups of buttermilk
2 eggs 2 tablespoons of melted unsalted butter (i melt in my microwave for 37 seconds)
3/4 cups of fresh or fresh frozen blueberries
1Add all of the dry ingredients together and mix well
2Add the blueberries to the mix and stir
3Add all wet ingredients together and mix until blended
4Add the wet ingredients into the dry ingredients and still until you get a beautiful thick batter.
5Put 1/2 cup of batter onto a non-stick grill heated to 350. Flip when firm around the edges and cook the other side until done.
6Sprinkle with powdered sugar and serve with a dollop of yogurt, berries and granola
The recipe is easy to scale. To thin the batter, you may use a bit of milk or cream and to thicken, use a bit of flour. One pancake per person is recommended.
