7 Layer Dip Mac N Cheese

1.5 cups uncooked black bean pasta
1.5 lb ground turkey
1.25 cup almond milk, divided
2 tbsp flour
1 cup shredded mozzarella
1/2 cup cotija
1 4 oz can green chilis
1/2 cup corn
3 cups pico
taco seasoning mix (or use low-sodium store bought):
2 tbsp chili powder
1 tbsp cumin
2 tsp oregano
2 tsp garlic powder
1 tsp paprika
1Preheat oven to 350.
2Cook pasta al dente according to directions on package, and set aside.
3Cook ground turkey until brown. Season with taco seasoning, and set aside.
4In a large pot, bring 1 cup almond milk to a simmer. Whisk remaining 1/4 cup almond milk with flour, and add to warm milk in the pot. Add cheese, and stir until melted.
5Add green chilis, corn, and ground turkey to the pot and mix well. Fold pasta carefully into the mixture.
6Pour in a greased medium sized dish (nothing larger than an 8x8) and bake in oven at 350 for 15 minutes.
7Top with pico, sprinkle with cotija cheese, and serve!
