5-ingredient Green Eggs & Ham Muffins (low-carb, Gluten-free)

Preheat oven to 375 ˚F. Combine all ingredients except for Canadian bacon in the bowl of a food processor. Process until all of the kale is broken up into tiny pieces, and egg batter is a pastel green color. Stir in Canadian bacon pieces. Divide mixture evenly among 12 slots of a well-greased muffin pan. Bake for 20 to 25 minutes, until egg mixture is set.

3 oz canadian bacon, chopped into small pieces

1/4 tsp salt

1/4 tsp crushed red pepper flakes (optional)
