Main Ingredients

1 tablespoon olive oil

1 small onion (finely chopped)

1 medium green pepper (finely chopped)

1 clove garlic (finely minced)

1 lb grass fed ground beef

3 heaped tablespoons tomato paste

1/2 cup diced tomatoes

8 oz beef bone broth

1 1/2 teaspoon chili powder

1 teaspoon cumin

1 1/2 teaspoon salt

1/2 teaspoon pepper


1In a large stock pot or dutch oven, heat olive oil under medium heat. Add onions and bell peppers. Sautée for 1-2 minutes. Stir in garlic, salt, pepper, and spices.

2Add ground beef and cook until browned. Stir in tomato paste, tomatoes, and broth.

3Bring to a boil, then reduce heat to low. Cook for 20-25 minutes, stirring occasionally.

4Top with cheese, sour cream, and avocado if desired.
