20 Minute Steel-cut Oatmeal
On chilly mornings where the wind is whipping and frost nipping at your heels, a bowl of chewy, comforting steel cut oats will do just the trick to warm you from the inside out.

3 cups water, unsweetened almond milk, or combination of both
1 cup uncooked steel-cut oats
1 tablespoon maple syrup
dash of cinnamon and salt
1Bring liquid to a boil in a medium saucepan over high heat. Once boiling, toss the oats into the party, stirring into liquid.
2Reduce heat to a simmer, keeping a careful eye that the pot does not boil over. Occasionally stir the oats to prevent them from sticking to the pot. After about 20 minutes or until desired level of thickness, remove from heat.
3Serve immediately, topping with whatever your tickles your fancy. I like blackberries, pomegranate arils, granola, almond butter, and coconut chips.
4Store leftovers in the refrigerator.*
*This recipe could easily be doubled to be used as breakfast for the entire week for you and your family! When reheating, you will need to add a little more liquid because it will thicken even more!
